Our ‘Rum of the Week’ is Hopkins Rum made by the Dancing Cow Distillery on the English South Coast in Lymington. They accelerate the ageing process by adding Bourbon Barrel chunks so there is increased surface area to flavour and colour the spirit with. They also leave it open to air and use ultrasonic waves to speed up reaction times. And heating it speeds up evaporation instead of the ‘Angels Share’. Clever Right?
The result is a very light rum with, warm vanilla notes as well as caramel and pineapple.
We suggest having it with Lime and Ginger Ale.
